I agree with the inspection outcome but have since carried out the following improvements:
1. The hot display is now monitored closely to make sure it is constantly above 63C
and the following conditions found at the time of the inspection were not usual conditions at the premises:
1. A new employee had covered the grill area of the hot display so the hot air could not circulate within.
