The establishment has replied:

I agree with the inspection results but have since carried out the following improvements:

• A new management system has been implemented.
• There is now a new manager and/or new staff.
• The staff have been trained/re-trained/given instruction/are under revised supervisory arrangements.

‘From 1^st March we will….

• Only open the kitchen on Wed, Thurs, Fri + Sat to have continuity of staff
• Reduce the menu
• Serve food from 9:30 – 2:30

We are currently implementing a major improvement on the Food Safety Management System.’

The conditions found at the time of the inspection were not typical of the normal conditions maintained at the establishment and arose because:

‘Unfortunately during the visit we were 2 employees down…. one on holiday and the other had to leave that morning to attend an urgent family mater…. this employee controls the day to day running of the coffee shop. The employees on site panicked therefore not answer standard questions correctly!’
