In addition, following the inspection that occurred on the 19th March, I have made urgent improvements necessary to the business to comply with the laws and regulation of the Food Hygiene. The Environmental Health Officers have supported me throughout to implement these changes and ensure new measures are put in place. They have been very understanding and are aware that this is the first time I have opened a food business, and so they have given me extra support due to my inexperience and insufficient preparation. The following improvements have been made to the business:
Established a system based on the Safe Food Better Business document and its principles to identify and control potential hazards in food handling.
Hygiene Practices:
Implementing and enforcing strict hygiene procedures, including proper handwashing by staff, ensuring there are plenty of handwash, hand sanitiser and paper towels and cleaning and sanitizing surfaces using the two step method and disinfectant spray and preventing cross-contamination between raw and cooked foods by using different coloured utensils and disinfecting the utensils using the two step method.
Hot water is readily available for various hygiene and safety reasons, including handwashing, cleaning equipment and surfaces, and preparing food.
Temperature Control:
Maintaining appropriate storage and handling temperatures for food to prevent bacterial growth and spoilage using two different probes for cooked and hot holding items and disinfecting it with probe wipes.
Freezers are kept at approximately -18c, Fridge between 0 - 5, Hot holding temperature at above 63c and cooking items at above 75c.

Foods are stored and labelled properly to prevent contamination and spoilage, and safe handling procedures are followed to minimize the risk of foodborne illness. For example, raw meats are placed on the bottom of the fridge away from cooked meat and vegetables.

Pest control measures are controlled and managed by Cwmbran centre to prevent pests from contaminating food and food preparation areas.
Labelling and Information:
Foods are correctly labelled and that information on food safety and allergens is readily available.

All surfaces (work surfaces, walls, ceilings, windows, doors) are kept clean. Premises are well-maintained and in good repair to prevent contamination.
Layout and Design:
The food van enables safe working practices, including separation of raw and cooked food preparation areas, and adequate spacing between work surfaces.
Lighting and Ventilation:
Adequate lighting is ensured for visibility and cleaning. Ventilation systems and extractor are in place to remove odours and prevent condensation.
Facilities:
Adequate washing facilities (including hot and cold water, hand basins) are put into place. Waste disposal systems are effective and prevent the attraction of pests.
Pest Control:
Proactive pest control procedures are necessary to prevent infestations that could contaminate food.
