Since the inspection, we have taken the following actions to address the points raised:

• Both the hand wash and rinse sinks are now equipped with soap and anti-bacterial hand sanitiser to ensure consistent hand hygiene.
• The cracked floor tiles identified have been replaced.
• Food temperature probing is routinely carried out, and calibration of equipment is completed weekly using boiling and ice water, as documented in our safe methods book.
• Although our menu remains consistent, we have introduced daily recording of 3–4 hot food items to further demonstrate compliance.
• The rinse sink tap has been replaced with a smaller fitting to reduce splashing.
• Pooling of water in the potato area was due to routine floor scrubbing, which is carried out twice daily.
• The fish observed defrosting had just been delivered and was temporarily placed in a tray next to the wash up sinks.
• The shelf used for storing potatoes has been replaced.
• Cloths are washed at 60°C on a long cycle, which has been our standard for over ten years. We also use surface sanitiser to maintain hygiene.
